Toasted Spice Cake - this page was in with Mother's things, dated 3 May 1948 by Belle McCoy (second wife of Tilman's brother-in-law Ephraim).

  • 3/4 cup butter
  • 2 cups sifted brown sugar
  • 2 eggs, separated
  • 1 teaspoon soda
  • 1 1/4 cups sour milk
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon cloves
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla

Blend butter with sugar and egg yolk. Dissolve soda in sour milk. Add milk alternately with all sifted dry ingredients. Add vanilla. Mix until smooth. Pour into a butter and floured pan (8x12). Spread batter with Brown Sugar Meringue.

Brown Sugar Meringue - Beat 2 egg whites left over from cake, until it holds a point but is not dry. Slowly add 1 cup brown sugar and continue beating until smooth. Spread meringue over raw cake batter. Sprinkle with 1/4 cup of broken nutmeats (optional). Bake in moderate oven (350 degrees) for 45-50 minutes or until done.
