Pineapple Upside-Down Cake recipe she used from Better Homes Cookbook, 1949. She underlined the melting part.

Melt 1/4 cup butter in 8" square cake pan. Add 2/3 cup brown sugar. Over this arrange 9 slices pineapple with maraschino cherry in center of each. Make 1/2 recipe Hot Water Sponge Cake (below) substituting syrup from canned pineapple for water and omitting extract; pour over pineapple slices.
