Hot Water Sponge Cake

  • 4 egg yolks
  • 1 1/2 cup sugar
  • 1/2 cup boiling water
  • 1 1/2 cup cake flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon lemon or vanilla extract
  • 4 stiff beaten eggs

Beat egg yolks until very thick; gradually add sugar and continue beating. Add water; mix well and add sifted dry ingredients. Mix until smooth and add extract. Fold in egg whites. Bake in a 10" ungreased angel-cake pan in slow oven (325 degree) 1 hour. Invert pan to cool. Serve plain or frosted.
