Eleanor's Favorite Recipes

 

Mother's Eggless, Milkless, Butterless Cake - Mother in this case being Eleanor's mother. I don't recall eating this cake, but it must have meant something to her as I found the recipe card as I was sorting through her things.

  • 1 cup brown sugar
  • 1 cup water
  • 1 cup seedless raisins
  • 1/3 cup lard
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoons nutmeg

Boil 2 minutes, and let cool. When cold, sift together the following:

  • 2 cups flour
  • 1/2 teaspoon baking powder

And add to the previous mixture. Disolve 1 teaspoon soda in a little hot water, and add that as well. A cup of nut meats added, improves the cake. Bake very slowly about 1 hour in greased and floured pan. She didn't have a temperature written down, so you'll have to experiment, probably starting at 350.
